Last Friday I had the pleasure of attending a special wine dinner at Del Frisco’s Restaurant in Chicago. The setting was beautiful! The staff is well-trained, the wine director is quite skilled in his selections, and the food is amazing. If you haven’t been to Del Frisco’s, go check it out. The wine cellar tower alone is worth the trip! The Terlato family representatives were on hand to introduce the winemaker, Elizabeth Vianna. Below is a brief synopsis from the Chimney Rock website that gives a summary of their estate, vision, and history.
“Our family was fortunate to have the opportunity to acquire the Chimney Rock estate in 2004. The estate was established in 1980 by Hack and Stella Wilson, who brought their love of wine and South African winery architecture to the Napa Valley. Since our acquisition and involvement, we have built on that foundation and advanced the quality of every aspect of the estate and its wines. We have worked hand-in-hand with our team to elevate Chimney Rock to its potential. We have done so by focusing on intelligent and sustainable farming and grape growing led by V.P. of Winemaking, Doug Fletcher, along with a soft-handed and thoughtful approach to winemaking led by Winemaker, Elizabeth Vianna. We strive to allow the unique and magnificent Stags Leap District soil and fruit to show themselves in their best light. We were treated to a mouthwatering, multi-course meal, superbly paired with Chimney Rock wines. Del Frisco’s chef, Jared, is innovative and talented…the meal was incredible! The blue crab in butter lettuce paired with the Chimney Rock “Elevage Blanc” was sublime! My favorite meat is lamb, so I was thrilled when I saw rack of lamb on the menu. The lamb was accompanied by the Chimney Rock Cabernet Sauvignon Stag’s Leap District 2012…another homerun hit! We then had two Cabernets paired with the espresso rubbed N Y Strip steak…my favorite was the Chimney Rock “Tomahawk Vineyard” 2012. Last, but not least, was our dessert course. A creamy, divine white chocolate crème brûlée with a blackberry compote-expertly paired with my number 1 wine of the evening- Chimney Rock “Elevage” Stag’s Leap District, Napa Valley 2006. Elizabeth Vianna spoke throughout the evening about her wines, the vineyards, and the winery. She made a point of stopping at each table to chat and answer questions.
This was the perfect end to our week.
